Philippine Recipes – Longsilog Recipe (Breakfast) – Pinoy Food

Silogs, a popular term for sinangag (fried rice) and itlog (egg), are arguably every Pinoy’s favorite morning meal. Due to its popularity, it can even be considered the national breakfast of the Philippines, if such a thing exists.

These morning treats come in various combinations with tapsilog (with lid), tocilog (with bacon), and longsilog (with longanisa or Filipino sausage) topping the list. There are still many variations of silogs like cornsilog (with corned beef), chiksilog (with chicken), chosilog (with marinade), dangsilog (with danggit or rabbit), bangsilog (with bangus or milkfish), hotsilog (with hotdog) and many more.

But for this recipe we are going to prepare a combination of longanisa or the famous Pinoy sausage, sinangag or the tasty fried rice with garlic and eggs. Delicious! My mouth is already watering just thinking about it.

Ingredients:

  • 5 cans of longanisa sausage
  • 3 eggs
  • 4 cups of rice left over from the night before
  • 1 cup of water to cook longanisa
  • ¼ tablespoon ground black pepper
  • 2 cloves of garlic
  • Oil for frying
  • ½ tablespoon of salt
  • ¼ tablespoon MSG

Cooking procedure:

  • To cook the longanisa, place the longanisa in a pan together with the water and put over medium heat until it boils. Let the water evaporate completely until the oil starts to come out of the sausages. To cook evenly, constantly roll the sausages and fry them for about 5 minutes.
  • For the eggs, beat two eggs like an omelet. Add a pinch of salt to taste and cook in a pan. Remove from the pan and reserve. Get another egg and on the sunny side up. Cook with the same skillet. Remove when ready and reserve.
  • For the garlic fried rice, break the rice especially the large pieces and set aside. Put oil in a hot skillet and cook the garlic until the color turns golden and the aroma is floating in the air. Add the rice and stir for about 1 minute. Add the MSG, salt, and pepper for extra flavor. Cook for another 5 minutes, stirring constantly to prevent the rice from burning.
  • Place the fried rice, longanisa, and eggs on a serving plate and serve hot.
